Pearl barley has by far the lowest glycemic index of any grain ever tested. Its GI is 25. Next lowest is rye, but only in the form of its whole kernels, with a GI of 34. Low glycemic is good for people with diabetes, because it has little effect on our blood glucose levels.
Lately I have been eating a lot of beans. They are an almost perfect food for people with diabetes, because they have a lot of protein and so little effect on our blood glucose level.
But beans aren’t perfect because the protein they have is incomplete. They lack some essential amino acids.
I don’t know why I never thought of it before. But in the last couple of weeks I have been eating bowlfuls of a great barley cereal that is perfect for people with diabetes. It is really easy to make, tastes great, and is certainly healthy.
